  • 1 teaspoon Dried Oregano Italian seasoning can work in place.
  • 1 teaspoon Cumin Coriander can serve as an alternative.
  • 1/2 teaspoon Ground Turmeric Fresh turmeric can enhance flavor.
  • to taste Kosher Salt & Freshly Ground Black Pepper Adjust to taste.
For the Beans
  • 1 can Black Beans Canned beans are convenient.
  • 1 teaspoon Chili Powder Swap with smoked paprika for flavor.
For Toppings
  • 1 medium Avocado Replace with hummus for lower-calorie option.
  • 1 cup Cherry Tomatoes Substitute with diced bell peppers.
  • 1/4 cup Pepitas (Pumpkin Seeds) Sunflower seeds can replace pepitas.
  • 1/4 cup Salsa Use store-bought or homemade.
  • 2 stalks Sliced Scallions Chives can serve as substitute.
  • 1 wedge Lime Lemon juice is a suitable alternative.
  • 1 pinch Smoked Paprika Regular paprika can be used.

Method
 

Preparation
  1. Drain the extra-firm tofu and gently mash it. In a skillet, heat olive oil over medium heat, adding the mashed tofu, garlic, oregano, cumin, turmeric, salt, and pepper. Sauté until heated through and fragrant, about 5 minutes.
  2. In the same skillet, drizzle in the remaining olive oil and add the black beans along with chili powder and cumin. Stir and cook until the beans are warm, roughly 2 minutes.
  3. Once both the tofu and beans are ready, divide them evenly among your serving bowls.
  4. Adorn each bowl with sliced avocado, halved cherry tomatoes, and sprinkle with pepitas, salsa, scallions, and a squeeze of lime to elevate the flavor!
