  • 2 tablespoons Olive oil
  • 1 cup Bomba rice or Arborio Paella rice
  • 4 cups Chicken stock
  • 1 medium Diced onion
  • 3 cloves Minced garlic
  • 2 tablespoons Tomato paste
For the Flavor
  • 2 teaspoons Smoked paprika
  • 0.5 grams Saffron threads
  • 1 teaspoon Turmeric
  • 1 teaspoon Red chili flakes Adjust to taste
  • 1 teaspoon Kosher salt
For the Protein
  • 200 grams Spanish chorizo (sliced)
  • 400 grams Raw shrimp
For the Finish
  • 1 cup Fresh chopped parsley

Method
 

Cooking Instructions
  1. Heat a large paella pan over medium heat and add olive oil. Sauté diced onion for 5 minutes until golden. Add minced garlic and sauté for another 30 seconds.
  2. Stir in tomato paste, mixing thoroughly. Cook for 2-3 minutes until well combined.
  3. Sprinkle in kosher salt, smoked paprika, red chili flakes, turmeric, and saffron. Stir well.
  4. Add bomba or Arborio rice and stir-fry for a few minutes, ensuring each grain is coated in the oil and spices.
  5. Stir in chicken stock and bring to a simmer.
  6. Reduce heat to low, cover, and let simmer for about 10 minutes.
  7. Gently fold in sliced chorizo and cook for an additional 5 minutes.
  8. Arrange raw shrimp on top, gently pushing them down. Cook for 5-10 minutes until shrimp are pink and cooked through.
  9. Sprinkle with fresh parsley and serve warm.
