For the Chipotle Mayo

Method
 

Cooking Instructions
  1. In a large mixing bowl, toss together the cooked salmon, Panko breadcrumbs, eggs, chopped chipotle in adobo, tamari, honey, garlic powder, chili powder, kosher salt, black pepper, and mixed herbs. Form the mixture into 3-4 burger patties.
  2. Warm a generous splash of avocado or olive oil in a large skillet over medium heat.
  3. Carefully place the patties in the skillet and fry for about 3-5 minutes on each side until they are golden and crispy.
  4. As the second side finishes cooking, place a cheese slice on each burger. Cover the skillet for 1-2 minutes.
  5. In a small bowl, combine the mayo, chopped chipotle in adobo, and honey. Mix until smooth.
  6. Layer the toasted brioche buns with a generous spread of chipotle mayo, followed by the cheesy burgers, shredded lettuce, fresh avocado, and herbs.
