Method

How to Make Eggplant Parmesan
  1. Start by cutting the eggplants into half-inch rounds. Sprinkle with salt and let them sit for about 30 minutes. Rinse and pat dry afterward.
  2. In a bowl, beat eggs with a splash of water. Dredge the eggplant slices in the egg mixture, then coat them in the panko breadcrumbs.
  3. Heat olive oil in a skillet and shallow-fry the eggplant until golden brown, around 2-3 minutes per side, or bake at 450°F for about 20 minutes.
  4. Layer marinara sauce, followed by eggplant, mozzarella, and parmesan in a baking dish until all ingredients are used, finishing with mozzarella.
  5. Bake in the oven until the cheese is bubbly and golden, approximately 30 minutes.
  6. Allow to cool slightly before serving. Pairs well with crusty bread or a fresh salad.
