Method
 

Cooking Instructions
  1. Blanch the Green Beans: Bring a large pot of salted water to a boil. Add the fresh green beans and blanch for 2 minutes. Transfer to ice water bath to stop cooking and drain well.
  2. Sauté Shallots and Pancetta (if using): In a 12-inch skillet, melt the unsalted butter and add olive oil over medium heat. Add diced shallots (and pancetta, if using) and sauté for 8-10 minutes until shallots are lightly browned and caramelized.
  3. Combine and Season: Add drained green beans to the skillet with sautéed shallots. Sprinkle in salt and pepper to taste, and cook for an additional few minutes until desired doneness is reached.
  4. Final Adjustments: Taste and adjust seasoning if needed. Serve warm and enjoy!
