Cooking Steps
- Slice the chicken thighs into thin, bite-sized pieces and coat them lightly with flour.
- Prepare the atsuage by pouring boiling water over it to clean and soften, then cut into blocks.
- Blanch the choy sum for 30 seconds in boiling water and cool them in an ice bath.
- Combine all broth ingredients in a saucepan and add the atsuage, shiitake mushrooms, and carrot slices.
- Gradually add the chicken pieces, ensuring they are submerged in the simmering broth.
- Cook for 3 minutes or until the chicken is fully cooked through and observe the broth thickening.
- Serve hot with choy sum on the side, optionally garnished with wasabi.
