How to Make Kimchi Fried Rice
  1. Heat the Oil: Begin by heating a wok or large skillet over high heat. Add the oil and make sure it's hot enough to create a little shimmer on the surface.
  2. Sauté Aromatics: Once the oil is hot, toss in the minced garlic and diced onion. Sauté them for about 1-2 minutes until they are aromatic and the onion turns translucent.
  3. Add Kimchi: Next, add the kimchi to the pan. Stir quickly to mix it with the garlic and onion, allowing its tangy flavor to awaken, about 2 minutes.
  4. Incorporate Rice: Gently add the overnight steamed white rice to the mixture. Use a spatula to stir and combine well, breaking apart any clumps of rice so that it's evenly coated.
  5. Season and Garnish: Pour in the soy sauce, drizzle the sesame oil, and sprinkle the ground black pepper and scallions. Stir everything together for a few more seconds until well blended.
