Preparation
- Cut off the stems from the fresh spinach, rinse it thoroughly under cold water, and let it drain in a colander.
- Bring a pot of salted water to a boil. Blanch the spinach for about 30 seconds, then quickly remove it and plunge it into a bowl of ice water.
- After cooling, drain the spinach again and gently squeeze out any excess water. Divide the spinach into two equal portions.
Savory Dressing
- Whisk together half of the minced garlic, soy sauce, toasted sesame oil, half of the chopped green onion, and sesame seeds.
- Toss this dressing with one portion of the spinach.
Spicy Dressing
- Mix together the remaining minced garlic, soy sauce, sesame oil, green onion, sesame seeds, Korean red chili flakes, Korean chili paste, and sugar.
- Blend it well into the other half of the spinach.
Final Touch
- Taste each salad and adjust the seasoning to your preference. Optional: Serve with a sprinkle of extra sesame seeds.
