Cooking Steps
  1. In a skillet, warm olive oil over medium-high heat.
  2. Pound the chicken breasts to about 1/2 inch thickness and season with salt and pepper.
  3. Cook the chicken for approximately 5 minutes on each side until golden brown and internal temperature reaches 165°F (75°C).
  4. In a saucepan, mix together raspberry jam, chipotle peppers, apple cider vinegar, garlic powder, onion powder, and a pinch of salt. Heat until boiling, then reduce heat.
  5. Plate the grilled chicken and drizzle 1/4 cup of the warm raspberry sauce over each breast. Garnish with fresh herbs.
