For the Eggplant Filling
  • 2 small Eggplants baby Italian, ~10oz each
  • 1 medium Onion chopped
  • 6-8 cloves Garlic finely chopped
  • 0.5 cup Olive Oil plus extra for drizzling
  • Sea Salt and Freshly Ground Pepper to taste
  • 1 tbsp Dried Greek Oregano or Italian herbs as substitute
  • 4 medium Tomatoes ripe
  • 2 tbsp Tomato Paste
  • 0.5 cup Flat-Leaf Parsley minced
  • 0.25 cup Plain Breadcrumbs consider gluten-free
  • 0.5 cup Pecorino or Parmesan Cheese grated, or nutritional yeast for dairy-free
  • 1 cup Hot Water
For the Yogurt-Garlic Sauce
  • 0.5 cup Greek Yogurt
  • 0.5 cup Buttermilk or more yogurt/dairy-free option
  • 2 tbsp Extra Virgin Olive Oil for sauce
  • 1 small clove Garlic crushed and minced
  • Pinch of Salt to taste
For Garnish
  • Pomegranate Seeds optional
  • Fresh Thyme Leaves

Method
 

Preparation
  1. Preheat oven to 350°F (175°C).
  2. Cut the eggplants in half lengthwise and scoop out the flesh, leaving about ¼ inch intact.
  3. In a large saucepan, heat olive oil over medium heat and sauté onions for about 4 minutes.
  4. Add chopped eggplant flesh and cook until soft and lightly browned, then stir in garlic, salt, pepper, and oregano.
  5. Incorporate tomatoes, tomato paste, and parsley, then simmer for 10-15 minutes.
  6. Arrange eggplant halves cut side up in a baking dish, fill with the mixture, and top with breadcrumbs.
  7. Pour hot water around the stuffed eggplants, cover with foil, and bake for 30-40 minutes until tender.
  8. Uncover, sprinkle cheese on top, drizzle with olive oil, and bake for an additional 5-10 minutes until cheese melts.
  9. Whisk together yogurt, buttermilk, garlic, and salt while eggplants bake, and refrigerate until serving.
  10. Let the baked eggplants rest for 15 minutes before serving, then top with yogurt sauce, pomegranate seeds, and thyme.
