Ingredients

For the Base
  • 2 medium Sweet Potatoes Can substitute with regular potatoes or butternut squash.
  • 2 tablespoons Olive Oil Substitute with avocado oil or melted coconut oil.
For the Chicken and Veggies
  • 1 pound Boneless Skinless Chicken Breasts Cut into bite-sized pieces.
  • 1 medium Onion Use red and white for color, or omit if necessary.
  • 1 medium Bell Pepper Any color works, or use jalapeños for extra spice.
  • 1 cup Grape Tomatoes Can replace with cherry tomatoes or omit if unavailable.
For Seasoning
  • 2 tablespoons Ranch Seasoning Using a powdered mix offers a stronger flavor.
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Smoked Paprika Regular paprika can be used as a substitute.
  • 1 teaspoon Garlic Salt Can be replaced with regular salt and fresh minced garlic.

Equipment

  • Oven
  • Sheet Pan
  • Parchment paper
  • Mixing Bowl

Method

  1. Preheat the oven to 400°F (200°C) and line a sheet pan with parchment paper for easy cleanup.
  2. Prepare the sweet potatoes by cubing them and placing them in the center of the pan. Drizzle with 1 tablespoon of olive oil, toss to coat, and pop them in the oven to bake for 15 minutes.
  3. In a large bowl, combine diced chicken, bell peppers, onions, and grape tomatoes. Add the remaining olive oil, ranch seasoning, smoked paprika, dried oregano, and garlic salt. Stir well to coat everything.
  4. Add the chicken mixture around the partially cooked sweet potatoes on the sheet pan, spreading it out for even cooking.
  5. Return the pan to the oven and bake for another 15-18 minutes, or until the chicken is cooked through with an internal temperature of 165°F (74°C).
