Ingredients
  

For the Noodles
  • 130 g Maifun Noodles dried, can be substituted with vermicelli or other thin rice noodles
For the Protein
  • 10 Shrimp large, can substitute with chicken or tofu
  • 50 g Char Siu Pork or Turkey Bacon (3 strips), optional for richness
For the Vegetables
  • 2 cups Cabbage shredded, bok choy or leafy greens can be used
  • 1 Carrot sliced thin, can substitute with other vegetables
  • 1 Red Onion small, thinly sliced, can substitute with green onions
  • 2 Dried Red Chili Peppers provides heat, can use chili flakes or omit
  • 3 stalks Scallions chopped, adds freshness
For Flavoring
  • 1.5 tablespoons Curry Powder key flavoring agent
  • 0.25 teaspoon Salt adjust according to taste
  • 1 tablespoon Rice Vinegar can substitute with lime juice
  • 1 teaspoon Toasted Sesame Oil can substitute with olive oil
  • 1.5 tablespoons Soy Sauce can use low-sodium for a healthier option
  • Ground White Pepper for seasoning, can use black pepper

Method
 

Cooking Steps
  1. Soak the noodles in hot water for 7-8 minutes until they reach al dente texture. Drain and set aside.
  2. Cut the soaked noodles into manageable lengths.
  3. Heat vegetable oil in a wok over medium-high heat. Add shrimp and char siu pork, cooking until the shrimp turns pink.
  4. Add cabbage, carrot, red onion, and dried chili peppers, along with half of the scallions. Sauté for 4 minutes.
  5. Sprinkle curry powder and stir to combine with the vegetables.
  6. Add soaked noodles, salt, rice vinegar, sesame oil, and soy sauce. Toss until well-coated and heated through.
  7. Serve immediately, garnished with remaining scallions and ground white pepper.
