Prepare Noodles
- Boil fresh Hong Kong pan fried noodles for about 30 seconds, then drain and toss gently to remove excess moisture.
Make Sauce
- In a bowl, mix together light soy sauce, vegetarian oyster sauce, dark soy sauce, Shaoxing wine, sugar, and 1 tablespoon of water. Set aside.
Stir Fry Noodles
- Heat 2 tablespoons of peanut oil in a skillet over high heat. Add the noodles and fry until golden brown and crispy, approximately 2-3 minutes.
Add Sauce
- Lower heat to medium-low, pour in the sauce mixture, and stir into the noodles until mostly absorbed, about 2 minutes.
Cook Vegetables
- Push the noodles to one side of the pan, add remaining oil with green onions and bean sprouts to the other side, stir-fry for 30 seconds, then mix together.
Optional Egg
- Top with a sunny-side-up egg for an extra delicious touch!
