Ingredients
  

For the Noodles
  • 200 grams Fresh Hong Kong Pan Fried Noodles or dried egg noodles
For the Sauce
  • 2 tablespoons Light Soy Sauce high-quality recommended
  • 1 tablespoon Vegetarian Oyster Sauce or regular oyster sauce for non-vegetarians
  • 1 tablespoon Dark Soy Sauce use moderately
  • 1 tablespoon Shaoxing Wine or dry sherry as a substitute
  • 1 teaspoon Sugar
  • 1 tablespoon Water
For the Cooking
  • 2 tablespoons Peanut Oil or vegetable oil
For the Garnish
  • 2 stalks Green Onions or garlic chives
  • 100 grams Bean Sprouts do not use too many
  • Homemade Chili Oil optional

Method
 

Prepare Noodles
  1. Boil fresh Hong Kong pan fried noodles for about 30 seconds, then drain and toss gently to remove excess moisture.
Make Sauce
  1. In a bowl, mix together light soy sauce, vegetarian oyster sauce, dark soy sauce, Shaoxing wine, sugar, and 1 tablespoon of water. Set aside.
Stir Fry Noodles
  1. Heat 2 tablespoons of peanut oil in a skillet over high heat. Add the noodles and fry until golden brown and crispy, approximately 2-3 minutes.
Add Sauce
  1. Lower heat to medium-low, pour in the sauce mixture, and stir into the noodles until mostly absorbed, about 2 minutes.
Cook Vegetables
  1. Push the noodles to one side of the pan, add remaining oil with green onions and bean sprouts to the other side, stir-fry for 30 seconds, then mix together.
Optional Egg
  1. Top with a sunny-side-up egg for an extra delicious touch!
