- In a large bowl, combine the ground beef, minced garlic, grated ginger, soy sauce, chili paste or fresh chilies, sesame oil, and chopped scallions. Blend until the mixture is well combined and fragrant.
- Add cornstarch or flour into the mixture. This step is crucial as it helps bind all the ingredients together, ensuring a deliciously cohesive filling.
- Place a spoonful of the beef filling in the center of each dumpling wrapper. Moisten the edges with a little water, then fold and seal tightly, ensuring no air pockets remain.
- In a skillet, heat vegetable oil over medium-high heat until it’s hot and shimmering.
- Fry the dumpling rolls in batches for about 2-3 minutes on each side, or until they turn a beautiful golden brown and crispy.
- Remove the rolls from the skillet and place them on paper towels to drain excess oil. Serve them hot with your favorite dipping sauces!
