Making Shahi Tukda
- Prepare Rabri: Boil whole milk over medium flame, stirring continuously for 8-10 minutes until thickened. Add milk powder for creaminess, allowing a layer of malai to form. Stir in sugar and cardamom powder, cooking for 5-6 more minutes, then mix in dried fruits and let cool for 30 minutes.
- Make Sugar Syrup: In another pan, combine water and sugar, cooking until the sugar melts completely. Stir in saffron and cardamom powder, cooking for 4-5 minutes until a one-string consistency is achieved.
- Fry Bread: Heat ghee in a frying pan, adding bread slices and frying until both sides are golden brown. Soak each fried bread slice in sugar syrup to absorb sweetness.
- Assemble & Serve: On a serving plate, layer some rabri at the bottom, arrange the soaked bread on top, and add more rabri. Garnish with chopped nuts and drizzle with extra syrup if desired.
