- Preheat the oven to 400°F (200°C).
- In a bowl, combine 2 tablespoons of olive oil, ¼ cup low-sodium soy sauce, 1 tablespoon brown sugar, 3 minced garlic cloves, and the juice of 1 lime.
- Place the chicken breasts in a zip-top bag or bowl. Add the marinade, seal, and let sit for at least 30 minutes.
- Slice the bell peppers into strips and cut the red onion into wedges.
- Line a baking sheet with parchment paper and arrange the marinated chicken in the center, scattering pineapple and veggies around it.
- Bake for about 25-30 minutes until the chicken reaches 165°F and the veggies are tender-crisp.
