Ingredients

For the Cream Mixture
  • 2 cups Heavy Cream Provides creaminess and richness; no direct substitution, but can be partially replaced with milk for a lighter version.
  • 1 cup Milk Balances the richness of cream; use whole or reduced-fat milk depending on your preference.
  • 3/4 cup Sugar Adds sweetness to the dessert; adjust according to the sweetness of the pistachio paste used.
  • 1/2 cup Pistachio Paste Infuses the panna cotta with deep pistachio flavor; can substitute with finely ground pistachios for added texture.
  • 1 teaspoon Vanilla Extract Enhances the overall flavor profile; optional but recommended for a more complex taste.
  • 1 pinch Salt Balances sweetness and enhances flavors; just a pinch is suitable to elevate the taste.
For the Setting Agent
  • 1 tablespoon Gelatin Acts as a setting agent for the panna cotta's structure; ensure it is properly bloomed in cold water to prevent lumps.

Equipment

  • Saucepan
  • Ramekins
  • Whisk

Method

How to Make Panna Cotta al Pistacchio
  1. Sprinkle the gelatin over cold water and let it sit for 5-10 minutes until it becomes spongy.
  2. In a saucepan, combine heavy cream, milk, sugar, pistachio paste, vanilla, and salt. Heat gently to steaming—watch for bubbles! Whisk until the sugar is fully dissolved.
  3. Remove the saucepan from heat and add the bloomed gelatin. Whisk vigorously until fully dissolved.
  4. Distribute the creamy mixture into ramekins. Allow them to cool slightly at room temperature for 15-20 minutes, then refrigerate for at least 4 hours, until perfectly set.
  5. For a lovely touch, whisk pistachio paste with a bit of cream until smooth. Adjust the consistency with additional cream to your preference.
  6. Carefully serve the panna cotta directly in the ramekins or unmold onto plates for an elegant presentation.
