How to Make Slow Cooker Pork and Black Bean Stew
- Lightly spray or grease the slow cooker to prevent sticking.
- In the slow cooker, combine the canned black beans, boneless pork shoulder, dark beer, red bell pepper, and jalapeño, mixing them gently.
- Sprinkle the garlic powder, salt, ground cumin, dried oregano, and ground black pepper over the mixture, stirring well.
- Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the pork is tender.
- Using two forks, shred the pork in the slow cooker, discarding any excess fat.
- Stir the stew well and cover for an additional 30 minutes on low to let the flavors meld.
- Ladle the hot stew into bowls and garnish with lime wedges, diced green onion, sour cream, diced tomatoes, and chopped cilantro.
