For the Halwa
  • 4 tablespoons Unsalted Butter or Ghee for vegan option, substitute with coconut or olive oil
  • 1 cup Fine Semolina (Sooji) use finely ground for smooth texture
  • 2-3 cups Water adjust to achieve desired consistency
  • 1 cup Raw Cane Sugar or Turbinado Sugar can swap in granulated sugar
  • 3-4 pods Cardamom Pods ground cardamom works if pods are unavailable
For Flavoring
  • 1 teaspoon Rose Water optional
  • a pinch Saffron optional
For Garnish
  • 1/4 cup Slivered Almonds or use pistachios or walnuts

Method
 

Preparation Steps
  1. Heat a large nonstick skillet over medium-low heat. Add the unsalted butter or ghee and let it melt completely.
  2. Stir in the fine semolina (sooji) into the melted butter, roasting it while stirring frequently until it reaches a deep golden color, about 12-14 minutes.
  3. In a separate saucepan, combine water, raw cane sugar, and cardamom pods. Bring to a gentle simmer until the sugar dissolves completely, then remove from heat. Add rose water and saffron, if using.
  4. Carefully pour the syrup into the roasted semolina while stirring continuously for 3-4 minutes until the mixture thickens.
  5. Transfer the halwa to a serving dish and garnish with slivered almonds or other nuts of your choice.
