- Preheat your oven to 450°F.
- Chop the cauliflower into large florets. In a mixing bowl, combine the florets with olive oil and kosher salt, tossing until well-coated. Spread them out on a baking sheet and bake for 30 to 35 minutes, or until they're beautifully browned and slightly crispy, stirring halfway through.
- Melt the butter in a small saucepan over low heat. Once melted, add minced garlic and stir for about 30 seconds, then drizzle in the Frank’s hot sauce. Mix everything together, heating for an additional minute until it's aromatic and well-combined.
- Prepare the blue cheese dip: In a small bowl, mix plain yogurt, blue cheese crumbles, garlic powder, kosher salt (to taste), and fresh ground black pepper until creamy and smooth.
- Toss the roasted cauliflower in the buffalo sauce, adjusting the amount to suit your desired level of heat. Serve hot alongside the creamy blue cheese dip and optional celery sticks for a crunch!
