Ingredients
  

For the Mushrooms
  • 250 grams Button Mushrooms can substitute with shiitake or oyster mushrooms
  • 1 cup Flour or cornstarch for gluten-free
For the Sauce
  • 2 tablespoons Soy Sauce low-sodium preferred
  • 2 tablespoons Red Chili Sauce adjust to taste
  • 1 tablespoon Tomato Ketchup optional
  • 1 tablespoon Vinegar apple cider or rice vinegar
For the Aromatics
  • 4 cloves Garlic minced
  • 2 pieces Green Chilies sliced
  • 1 medium Onion cubed
  • 1 medium Capsicum (Bell Peppers) cubed
  • 2 tablespoons Spring Onion Greens chopped, for garnish

How to Make Spicy Indo-Chinese Chilli Mushroom
  1. Prep Mushrooms: Start by cleaning the button mushrooms thoroughly. Slice them into even pieces, coat with flour and a pinch of salt, and let them sit to absorb the seasoning.
  2. Fry Mushrooms: Heat oil in a deep frying pan over medium heat. Fry the coated mushrooms in batches until they're golden and crispy, about 4-5 minutes. Drain them on paper towels.
  3. Make Sauce: In a wok, heat a little oil and sauté minced garlic and sliced green chilies until fragrant. Then, toss in cubed onions and capsicum, stir-frying for 2-3 minutes.
  4. Combine Ingredients: Pour in the soy sauce, red chili sauce, ketchup, and vinegar. Stir well and then mix in a cornflour slurry.
  5. Toss Mushrooms: Lower the heat and gently add the fried mushrooms to the sauce, tossing them to coat evenly. Adjust with water if the sauce is too thick.
  6. Garnish and Serve: Sprinkle chopped spring onion greens on top and serve hot.
