For the Dipping Sauce

  • 1 tablespoon Ginger Freshly peeled and minced.
  • 3 tablespoons Awase Miso Paste Choose white or red.
  • 2 tablespoons Japanese Soy Sauce For umami depth.
  • 1 cup Water Or stock for richer flavor.
  • 1 teaspoon Granulated Sugar Balances savory elements.
  • 1 tablespoon Powdered Chicken/Vegetable Stock For umami; omit for vegetarian.
  • 1 tablespoon Chili Oil Adjust for heat preference.
  • 1 teaspoon Toasted Sesame Oil Optional for nuttiness.
  • 1 tablespoon Sesame Seeds For garnish.
  • 2 tablespoons Scallions Finely chopped; chives can substitute.
  • 1 tablespoon Bonito Flakes Optional; omit for vegetarian.
  • 1 teaspoon Ichimi Togarashi For extra spice.

Method
 

How to Make Spicy Tsukemen
  1. Heat vegetable oil in a pot over medium-low heat. Sauté minced garlic, ginger, and shallot for about 2 minutes until translucent and fragrant.
  2. Stir in the awase miso paste and Japanese soy sauce. Cook until it forms a soft paste.
  3. Gradually incorporate water, granulated sugar, and powdered stock into the pot. Bring to a gentle boil.
  4. Lower the heat and let the sauce simmer uncovered for about 15 minutes.
  5. Remove from heat and mix in chili oil, toasted sesame oil, and sesame seeds.
  6. Cook the noodles according to package instructions. Once done, drain and rinse under cold water.
  7. Divide the cooled noodles onto plates. Serve with dipping sauce in bowls, garnished with scallions and optional bonito flakes.

Notes

Store dipping sauce in an airtight container in the fridge for up to 5 days. Cooked noodles can be kept for 3 days with sesame oil to prevent sticking.
