Method
 

Cooking Instructions
  1. Preheat your oven to 425°F (or air fryer to 400°F). Line your baking sheet with parchment paper and spray with olive oil.
  2. Prepare the mushroom caps by wiping them clean or gently peeling the outer skin. Remove the stems and scoop out some of the insides.
  3. Sauté scallions and minced garlic in a large pan with olive oil for 1-2 minutes. Add spinach, stirring until it begins to wilt, then transfer to a bowl.
  4. Combine filling ingredients: add dill, cream cheese, feta, and salt and pepper to the bowl. Stir until creamy and well incorporated.
  5. Fill each mushroom cap generously with the filling. Sprinkle mozzarella on top and place in the oven.
  6. Bake the stuffed mushrooms for 20 minutes until bubbling and cheese is melted and golden.
