How to Make Ginger Pineapple Chicken Stir Fry
  1. Heat the Oil: In a large skillet, pour in the sesame oil or olive oil and warm it over medium heat.
  2. Cook the Chicken: Add the ground chicken (or pork) and season with black pepper. Break it apart as it cooks, allowing it to brown for about 5 minutes.
  3. Add Aromatics: Stir in the Thai red curry paste, salted butter, chopped garlic, and ginger. Cook for 2 minutes until fragrant.
  4. Incorporate Veggies and Nuts: Mix in the bell peppers, 3/4 cup of pineapple chunks, and cashews. Sauté for another 2-5 minutes.
