How to Make Sweet Potato Rounds with Brie
  1. Preheat your oven to 400°F (200°C). Slice sweet potatoes into ½ inch rounds and place them on a parchment-lined baking sheet. Brush generously with olive oil, then sprinkle with salt and pepper for flavor.
  2. Bake for 25-30 minutes, flipping halfway through until they are golden and tender.
  3. As soon as they are out of the oven, place a piece of creamy brie on each warm sweet potato round.
  4. Spoon cranberry sauce on each cheese-topped round, followed by sprinkling on the toasted pecans.
  5. If desired, drizzle with maple syrup and garnish with fresh herbs.
