  • 1 teaspoon Sugar adjust according to personal taste
  • 1/4 cup Basil or parsley for a different herbaceous note
  • 1/4 cup Pine Nuts can be omitted for a nut-free version

Method
 

Directions
  1. Prep the Vegetables: Start by trimming and cubing the eggplants, then slice the celery and onion.
  2. Fry the Eggplants: Heat oil to 347°F. Carefully fry the eggplant cubes until golden brown, about 2-3 minutes.
  3. Cube the Swordfish: While the eggplants are frying, cube the swordfish and set aside.
  4. Sauté Onions: In a separate pan, sauté the onions over low heat until softened.
  5. Combine Ingredients: Add the peeled tomatoes, capers, olives, and celery to the pan. Follow with vinegar, sugar, and basil.
  6. Incorporate Fish and Eggplants: Stir in the fried eggplants and cubed swordfish. Cook for about 15 minutes.
  7. Season and Serve: Adjust the seasoning, then serve warm.
