How to Make Warm Lentil Salad with Marinated Feta
- Heat 1 tablespoon of olive oil in a medium saucepan over medium heat. Add the shallots and garlic; sauté for about 3 minutes until fragrant, then mix in the ground coriander until well combined.
- Add the dry green lentils, 4 cups of water, and kosher salt to the saucepan. Bring the mixture to a boil, then reduce the heat to a simmer. Cook for 20-30 minutes until the lentils are tender but still hold their shape.
- In a bowl, combine the feta cheese, lemon zest, lemon juice, chopped parsley, dill, and the remaining olive oil. Season with salt and pepper to taste, mixing until the feta is well coated.
- Once the lentils are cooked, drain any excess water. Add the chopped kale to the lentils, stirring until the kale is slightly wilted. Gently fold in the sun-dried tomatoes, adjusting seasoning as needed.
- Transfer the lentil and kale mixture to a serving dish. Top generously with the marinated feta and drizzle with balsamic glaze for that sweet-tart finish.
