How to Make Warm Lentil Salad with Marinated Feta
  1. Heat 1 tablespoon of olive oil in a medium saucepan over medium heat. Add the shallots and garlic; sauté for about 3 minutes until fragrant, then mix in the ground coriander until well combined.
  2. Add the dry green lentils, 4 cups of water, and kosher salt to the saucepan. Bring the mixture to a boil, then reduce the heat to a simmer. Cook for 20-30 minutes until the lentils are tender but still hold their shape.
  3. In a bowl, combine the feta cheese, lemon zest, lemon juice, chopped parsley, dill, and the remaining olive oil. Season with salt and pepper to taste, mixing until the feta is well coated.
  4. Once the lentils are cooked, drain any excess water. Add the chopped kale to the lentils, stirring until the kale is slightly wilted. Gently fold in the sun-dried tomatoes, adjusting seasoning as needed.
