Ingredients

For the Salad
  • 2 cups Cooked Chicken Breasts Use leftover chicken for a quick and delicious base.
  • 1/2 cup Mayonnaise Adds creaminess; Greek yogurt works well for a lighter dish.
  • 2 tablespoons Soy Sauce Provides that essential umami flavor; feel free to adjust to taste.
  • 2 tablespoons Juice of Limes Brightens the salad; lemon juice can be a suitable alternative.
  • 1 tablespoon Sriracha Adds a delightful kick; reduce or omit if you prefer less heat.
  • 1 clove Minced Garlic Enhances the flavor; fresh garlic gives the best results!
  • 1 small Chopped Carrots Adds crunch and sweetness; substitute with julienned bell peppers for variety.
  • 2 Chopped Green Onions Provides a fresh, mild onion flavor; red onions can be used but will alter the taste.
  • 1 tablespoon Cilantro Adds vibrant herbal notes; parsley can work if cilantro isn't your favorite.
For the Wonton Cups
  • 24 Wonton Wrappers An easy-to-find base; frying them gives the best texture, but you can also bake for a healthier option.
  • Cooking Oil Use vegetable or peanut oil for frying the cups to a perfect golden brown.
Serving Suggestions
  • Sweet Chili Sauce Serve as a dipping sauce for a bit of sweetness to offset the heat; it’s irresistible!

Equipment

  • Muffin tin
  • Mixing Bowl
  • Oven

Method

Preparation
  1. Preheat your oven to 375°F. Gently press the wonton wrappers into a greased muffin tin to form small cups. Bake for about 8-10 minutes until they are golden and crispy. Let them cool slightly before filling.
  2. In a mixing bowl, combine leftover cooked chicken, mayonnaise, soy sauce, lime juice, sriracha, minced garlic, chopped carrots, and green onions. Mix everything until well blended, tasting and adjusting seasoning as necessary.
  3. Gently fold in the chopped cilantro to your chicken salad mixture, adding a lovely burst of flavor.
  4. Spoon the zesty chicken salad into each crispy wonton cup, being generous but careful not to overfill.
  5. Arrange your elegant cups on a lovely platter and serve immediately with sweet chili sauce on the side for dipping.
