  • 8.8 oz block halloumi sliced 1/3"-1/2" thick
  • Olive oil for brushing
  • 5 oz spring greens for a fresh base
  • 1 15 oz can chickpeas drained
  • 1 cup grape tomatoes halved
  • 1 cup mini cucumbers sliced
  • 1 cup Kalamata olives pitted
  • 1/4 cup red onion thinly sliced
  • Homemade Creamy Balsamic Dressing for drizzling
  • Kosher salt to taste

Method
 

How to Make Grilled Halloumi Cheese Salad
  1. Preheat a large sauté pan, cast iron griddle, or grill over medium-high heat.
  2. Slice the halloumi cheese into 1/3"-1/2" thick pieces and brush both sides with olive oil.
  3. Place the halloumi slices cut side down on the hot pan and cook for 2-3 minutes until golden-brown.
  4. Flip the cheese over and cook the other side for another 2-3 minutes. Sprinkle with kosher salt.
  5. While the cheese is cooking, arrange the spring greens on a serving platter.
  6. Layer on chickpeas, grape tomatoes, cucumbers, olives, and red onion.
  7. Place the grilled halloumi slices on top and drizzle with the homemade dressing.
  8. Toss gently if desired, and serve.
