Ingredients
  

For the Tofu
  • 14 oz extra firm tofu pressed and cubed
  • 1 tbsp oil neutral like canola or avocado
  • 2 tbsp soy sauce preferably low-sodium
  • 2 tbsp arrowroot starch can substitute with cornstarch
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp black pepper
For the Carrots
  • 2 medium carrots sliced
  • 1 tbsp za'atar spice
For the Chimichurri Sauce
  • 1 cup cilantro fresh
  • 1 cup parsley fresh
  • 1 tbsp lemon juice fresh
  • 2 tbsp red wine vinegar
  • 1/2 cup olive oil
  • 1 small shallot chopped
  • 2 cloves garlic cloves minced
  • 1 tsp dried oregano
For Serving
  • 2 cups cooked jasmine rice or any preferred grain

Method
 

Cooking Instructions
  1. Preheat the oven to 425°F (220°C).
  2. Combine cubed tofu in a bowl with oil, soy sauce, salt, pepper, garlic powder, paprika, and arrowroot starch. Toss gently until well-coated.
  3. Spread the seasoned tofu evenly on a parchment-lined sheet pan.
  4. Toss sliced carrots in the same bowl with oil, za'atar, salt, and pepper. Add to the sheet pan with tofu.
  5. Bake for 30-35 minutes, until the tofu is golden and carrots are tender.
  6. Prepare chimichurri by blending cilantro, parsley, lemon juice, red wine vinegar, olive oil, shallot, garlic, and oregano in a food processor.
  7. Cool the baked tofu for 5 minutes, then toss with the chimichurri sauce.
  8. Serve the chimichurri tofu and roasted carrots atop cooked rice.
