Method
 

Preparation
  1. Cook the whole wheat orzo according to package instructions until al dente. Drain and cool.
  2. In a large mixing bowl, combine the cooled orzo, shredded rotisserie chicken, chopped cucumber, sweet corn, spinach, and fresh dill. Mix gently.
  3. In a small bowl, whisk together lemon juice, olive oil, and season with salt and pepper to taste.
  4. Pour the dressing over the salad mixture and toss gently.
  5. Sprinkle goat cheese on top before serving and enjoy chilled.
