Ingredients

For the Base
  • 250 grams Glutinous Rice Flour Essential for that chewy texture; avoid regular rice flour as it won't yield the same result.
  • 200 grams Freshly Grated Coconut Use unsweetened for best flavor.
  • 100 grams Sugar Feel free to substitute with coconut sugar for a healthier option.
  • 1 teaspoon Salt Balances the sweetness and enhances flavors.
  • 1 teaspoon Vanilla Extract A delightful enhancer for the overall taste.
For the Color Layer
  • 1 teaspoon Red Food Coloring or Pandan Extract Choose pandan for a fresh flavor twist.
Optional Ingredient
  • 100 grams Palm Sugar To create a hidden filling in the Betawi version of Kue Awug.

Equipment

  • Steaming pan
  • Mixing Bowl
  • spatula
  • 16x16 cm pan

Method

Instructions
  1. Preheat your steaming pan over medium heat. Make sure it's nice and hot to ensure even cooking for your Kue Awug.
  2. Combine the glutinous rice flour, sugar, salt, and vanilla extract in a mixing bowl. Mix in the grated coconut thoroughly until the batter is well combined and slightly sticky.
  3. Divide the mixture into two equal parts. Color one part with red food coloring, adjusting the shade to your liking.
  4. Prepare a 16x16 cm pan by greasing it and lining it with parchment or banana leaves. Pour the white batter in first, smoothing it down with a spatula for an even base.
  5. Layer the pink batter on top of the white layer. Gently press it down to ensure the layers adhere together but avoid over-compressing.
  6. Steam in the preheated pan for 30 minutes or until a toothpick inserted in the center comes out clean. Let it cool completely before cutting it into delightful squares.
